oooo I am late at starting Lent !!, I ate meat yesterday!
I've been ill again and Maria did the cooking... I started this morning

I will be abstaining from meat, I will be eating fish sometimes and i will be eating simple, inexpensive foods


1 to resist temptation out of love for Him and in  memory of His time of temptations

2 at through this simplicity maybe fell deeper regret for my sins and reach towards salvation, turn away from the worlds shallow values and prepare for the joy of Easter

3 feel empathy with those who do without (when I eat lentils and rice for dinner I may feel more for those who eat these foods always, and not by choice, or may not eat at all this evening)

nr 3 is not the official reason for the fasting in my Church but it touches me deeply and leads to an increased will to charity which together with devotion and fasting are the 3 most important weapons in the fight to save our soul in the trational Catholic teaching I have recieved

may this time of contemplation bring you closer to God !

hi everyone

So I joined them, the evil money sucking crowd that just tells me what I already know anyway..... LOL

and I have lost weight, 6 kilos in 6 weeks, that is almost 14 pounds, I love it. I love the company of the other women, I love how my clothes are fitting and I have a dream that my pain will reduce when I am at a normal healthy weight. Mom goes with me for now, she has much less to lose but she helped me get through that door.

 Libby, I have to try this, I know. I know.... but I need to see if I can get my weight down and keep it down, I hate having health issues, I hate having high blood pressure and worrying about early death all the time, it's this or a gastric bypass...... if you need to take me off your friends list I get it, I really do... I'd miss you though

Cate: I am doing some things from the anti-inflammatory diet, mainly no pork and less bad carbs, no sugar, no baked sweets, no alcohol, less processed foods, lots of protein

my doctor agrees that it is a good thing to be doing this.

in 2 years my health insurance runs out ....((((shock)))).....  and I really NEED to be better by then to keep food on the table and not be a burden, I need to do everything I can ( no pressure or anything ), prayers are welcome !

Cate sent Maria the most lovely rosary, rosary bag and hand written note, in Swedish!!!
the rosary is in heavy glass beads and I think she bent the wires herself, if you have an interest in rosaries check out her new esty shop, it really is lovely!

I made a new food today, egg cheese, it is traditional in some parts of Sweden, you heat a large amount of milk, some sour cream and some eggs until it separates, then let it sit and then layer it with sugar in a colander, I will be serving it tomorrow with fruit salad made with mangos and pineapple for our new year dessert. It took for ever to heat, stirring all the while but I tasted it and it was lovely =D   sort of a cross between cottage cheese and custard

I am really tired, there is far too much to do at work, I am running like a horse and I am still behind,
I finally talked to my boss about the woman I was sharing a room with, always grumpy with me and sometimes downright mean. she moved me within 24 hours, Bless her, however that means that the former room mate decided she won't do any of my work (even though she should) when I am not there, I was away 2 days before Christmas, so I came back to a pile that almost reached the ceiling, it's worth it though, she was miserable and so was I

then I had to shop on the way home and there was a crowd like you wouldn't believe in all the stores. happy crowd buying for new years but still very tiring for me

 I finally got what we needed, we'll be having lobster (frozen, then thawed hehe) some nice steaks, devilled eggs and the the egg cheese. munchkin has decided she can eat some lobster (=D) as it's so seldom and she has never eaten one so YEAH, I think she is short on zinc actually (white marks on all her nails) so shellfish is especially good for her. I am taking her for blood tests after new years actually to check it out, if she is short on zinc what else is she missing? I hope she won't have to eat anything with eyes but her heath goes first!

please tell me what you are eating for Christmas!

I now have friends in several different countries and it would be fun to know what you are eating/buying/making/baking =D

 you "turkey eating" folks, tell me, maybe you have a side dish I haven't heard about or an special dessert

we are having

liver paté made with venison liver that DD's boyfriend brought home from his hunting license course, he is thrilled I am using it, the paté has onions, a smigen of anchovies, whipping cream, eggs, flour and the turrin is lined with bacon


potatoes gratin with anchovies, (although I think they are more like sardines would be in the states, just salted tiny fish) with whipping cream and onions........ my "must" have

ditto without the fish for the veggie munchkin

a city style ham, baked with sweet mustard and breadcrumb coating, served cold, most swedes think this is what makes the Christmas dinner Christmassy, mustard on the side

swedish meatballs

kidney beans in a sweet and sour sauce (nice with the ham) ..........hubby's "must have"

red cabbage cooked sweet and sour

deviled eggs with and without shrimp (again munchin friendly)

pickled herring in onion brine and in mustard dressing ( 2 kinds)

raw salmon in thin slices ( in swedish tradition this should be smoked or gravad but DD wanted it sashimi style, shrug)

sour cream eaten with the herring, the salmon and the eggs

broccoli with cheese sauce ( munchkin munching ) and for me =D

green salad


ris alla malta, this is cold ice pudding mixed with whipped cream, sugar and vanilla served with cherry jam, ........deadly ........
an assortment of the chocolates
spiced wine, called glögg, non alcoholic in our house

I think I got everything, I am stuffed just thinking about it!

I just have the ham left to bake........ it's been a LONG day but I'm still smiling...printing this so I don't forget anything, it's easily done!

as for me, I am like the donkey, thankful to be able to do service for Her a tiny bit....... I love Her and the King she bore
